Tasty Summer Treats

As we enter the season of plentiful fresh fruits and vegetables, it’s fun to play around with new recipes!  These are a few of my current favorites.  All quick, simple, and plant-based.  Served together, they would make a perfect summer meal!

Walnut Pecan Pate´ Appetizer

Meat-free “pate´” that’s equally as delicious

1/2 cup raw walnuts
1/2 cup raw pecans
1/4 medium red onion, chopped
2 large garlic cloves, chopped
1/2 package plain, silken tofu
splash of apple cider vinegar
1 tablespoon tamari soy sauce
1/2 teaspoon cayenne pepper
1/2 cup parsley, finely chopped

Place all ingredients into food processor and blend to desired consistency (tastes great course or smooth!)

Serve chilled with crackers or fresh sliced veggies

Seared Green Onions & Asparagus

Get all your veggies/grains/protein in one quick meal!

1 bunch asparagus
1 bunch green onions
1/2 tablespoon coconut oil

Cut ends off asparagus and steam until desired consistency (usually best left a bit crisp).

Heat oil in a cast iron pan.  Chop green onions into 1-inch bites, sear in pan until lightly charred.

Serve over cooked brown rice or quinoa with a drizzle of olive oil, dash of salt, and lemon garnish.

Hummus

1 cup soaked & cooked garbanzo beans
2 clove fresh garlic
1/4 cup water
1/2 cup olive oil
1/2 teaspoon cayenne pepper
1/4 cup parsley, finely chopped
1/2 lemon squeezed for juice
salt & pepper to taste

Place all ingredients into food processor and blend to desired consistency. Serve a dollop with meal.

Avocado Chocolate Pudding

This is a decadent alternative to dairy-based desserts

1 ripe avocado
1 very ripe banana
3 tablespoons cocoa powder
1 splash vanilla
dash ground cinnamon
pinch sea salt
1/2 teaspoon finely ground coffee beans
3 tablespoons maple syrup
1/2 cup coconut milk (from a can)

Place all ingredients into food processor and blend until smooth and thick.  Chill in refrigerator for 30 minutes to “set.”  Garnish with cocoa nibs and fresh sliced strawberries.  Serve in small portions as this is a very rich dessert.

(You can freeze the mixture for a more ice-cream-like treat)
